TASTING NOTE
Attractive pale-yellow color with a shiny and bright steely border. Fine bubbles and well integrated. Fines and delicate red fruits aromas. Pleasant carbonic sensation in the mouth, very well-balanced acidity, tasty and refreshing with a long and harmonious finish.
VINIFICATION
Low temperature first alcoholic fermentation (14-15ºC). Fermentation for 35 days, remaining later 30 days in contact with the lees. The next step is the tirage, being the second alcoholic fermentation made inside the bottle by means of the Champanoise method. 9 months of aging in the bottle in the cellars of the Private Winery of San Valero.
